Sweet and Crunchy Carrot Salad

This is Alyssa’s, from Milton, favourite salad because, “it’s sweet, delicious and nutritious”. This is perfect for a healthy snack but this salad would also make a great side dish for lunch or dinner.

Preparation Time: 5 minutes

Makes: 2 servings

Serving size: 1 cup (250 mL)

Tips

  1. If your kids don’t like the apple skin, simply peel it before grating.
  2. Look for edamame in the freezer section of the grocery store. It may be with regular frozen vegetables or in the organic section of the grocery store. Edamame should be cooked according to the package instructions before adding to a dish.
  3. When using apples that are in season, which are usually very juicy, you may want to squeeze some of the juice out of the apples after grating.
  4. This salad can be covered and refrigerated for up to 2 days for kids to enjoy when they come home from school.
  5. For a sweeter hint to this salad simply drizzle in a bit more honey to taste.
  6. Try this salad with chopped nuts or canned kidney beans or chickpeas instead of the edamame.

Ingredients

Carrots, peeled and grated

Large apple, grated

1

Edamame or chopped nuts

1/4 cup (50 mL)

Lemon juice

1 Tbsp (15 mL)

Cinnamon

1 tsp (5 mL) 

Liquid honey

1 tsp (5 mL) 

Directions

  1. Add edamame to a small saucepan of boiling water. Cover and simmer for 2 minutes. Drain and place in a large bowl.
  2. Grate the apples and carrots. Squeeze some of the juice out of the apples after grating.
  3. Combine carrots, apple, edamame, lemon juice, honey and cinnamon. Stir to coat well.
