Egg Bhurji

This savory Indian egg dish, made with chili pepper and ginger among other ingredients, is sure to add some spice to your day.

Cooking Time: 15 minutes

Makes: 2 servings

Ingredients

Eggs

Egg whites

4

Red chili powder (optional)

1/4 tsp (1 mL)

Canola oil

1 tsp (5 mL)

Green chili pepper, chopped

1

Chopped onion

1/2 cup (125 mL)

Chopped tomato

1 cup (250 mL)

Frozen peas

1 cup (250 mL)

Piece of ginger, grated

1 inch (2.5 cm)

Garam masala powder 1/2 tsp (2 mL)
Chopped fresh cilantro

1 tsp (5 mL)

Directions

  1. Beat eggs and egg whites in a bowl. Add the chili powder, if using. Set aside.
    In a fry pan, heat oil over medium heat. Add the chili pepper and onion and cook until soft. About 3 minutes.
  2. Add the tomatoes, peas, ginger and garam masala. Cook for 3 minutes.
  3. Add the egg mixture and stir while cooking for 3 to 5 minutes. Sprinkle with cilantro and serve immediately.
