Stephen's Curried Eggs

Stephen who’s in grade 4 in Bancroft, ON says this will be a favourite for kids that love flavours and experiencing new tastes.  Stephen likes to pick the vegetables from the garden and collect the eggs from his backyard chickens – but kids can also help by adding the spices and stirring the ingredients.

Tips:

  1. Be sure to use unsweetened coconut milk for savoury recipes. Give the container a good shake before opening it.
  2. ​Put leftovers away within 2 hours or sooner if they are in a warm location. Reheat leftovers to an internal temperature of 74°C (165°F). Discard uneaten leftovers after they have been reheated.

Ingredients

Potatoes

2 large (about 700 g)

Onion 1
Ginger

1 Tbsp (15 mL) 

Garlic

1 Tbsp (15 mL)

Tomatoes 2 large (about 454 g)
​Canola oil  

1 Tbsp (15 mL) 

Ground turmeric 

1 tsp (5 mL)

Ground coriander 

1/2 tsp (2 mL)

Hot pepper flakes (red chili flakes) 

1/4 tsp (1 mL)

Coconut milk 

1 cup (250 mL)

Salt  

1/4 tsp (1 mL)

Hard cooked eggs, peeled

Directions

1. Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.

2. Scrub potatoes with a clean vegetable brush under cool running water. Gently rinse onion, garlic, ginger and tomatoes under cool running water.

3. Peel and chop the potatoes and place in a pot of boiling salted water. Cook potatoes for about 10 minutes or until tender. Drain and set aside.

4. Dice the onion; set aside. Dice the tomatoes; set aside. Mince the ginger and garlic; set aside.

5. In a non-stick skillet, heat oil over medium heat and cook onion, ginger, garlic, turmeric, coriander and hot pepper flakes for about 5 minutes or until softened.

6. Stir in tomatoes and cooked potatoes; simmer for 5 minutes.

7. Add coconut milk and whole eggs; simmer for 10 minutes until the internal temperature reaches 74 ºC (165ºF) on a digital food thermometer and thickened slightly. Stir gently.
