Oat Flax Pancakes with Steamed Cinnamon Apples

2015 Kids Recipe Challenge winning recipe: 2nd place!

Elisha, from Thornhill, loves these pancakes. This flavour combination is a great start to the day. Have some fun with these pancakes and make them into shapes. 

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves: About 14 pancakes 

Tips:

  1. Stack pancakes with parchment paper in between layer and freeze for up to 2 weeks.
  2. Change up the apples for another favourite fruit such as pears.
  3. Put leftovers away within 2 hours or sooner if they are in a warm location.  Reheat leftovers to an internal temperature of 74ºC (165ºF).  Discard uneaten leftovers after they have been reheated.

Ingredients

All purpose flour

3/4 cup (175 mL)

Large flake oats

1/2 cup (125 mL)

Ground flax seed

1/4 cup (60 mL)

Granulated sugar

2 Tbsp (30 mL)

Baking powder

1 Tbsp (15 mL) 

Salt

A pinch

Eggs, yolks and whites separated

Plain 0% Greek yogurt

1 cup (250 mL)

Milk

2/3 cup (150 mL)

Each canola oil and butter, melted

1 Tbsp (15 mL) each

Cinnamon Apple Topping

 

Honey Crisp apple

1 large

Water

1 Tbsp (15 mL)

Ground cinnamon

1/2 tsp (2 mL)

Directions

  1. Wash hands with soap and warm water for at least 20 seconds.  Clean all countertops and equipment used for food preparation.
  2. In a large bowl, whisk together flour, oats, flax seeds, sugar, baking powder and salt.
  3. In another bowl, whisk together egg yolks, yogurt, milk, oil and butter. Pour over flour mixture and stir to combine.
  4. In another bowl, beat egg whites until stiff peaks form. Gently fold into pancake batter.
  5. Heat a griddle or large nonstick skillet over medium heat and using 1/4 cup (60 mL) measure, pour batter into the pan.
  6. Cook until bubbles appear on top, about 2 minutes. Turn over to cook other side until golden brown.
  7. Repeat with remaining batter.



Cinnamon Apple Topping
  1. Meanwhile, gently rinse apple under cool running water.  Chop apple and place in a small saucepan with water and cinnamon.
  2. Cover and steam over medium heat about 5 minutes or until apples are softened.  Stir as needed.
  3. Top pancakes with apples to serve.
